1 medium pumpkin, in thick slices (ca. 1 cm)
½ cups farina
1 cup brown sugar
2 cups walnuts
Cinnamon, clove & cardamom
½ cup dark rum
¾ cup Calypso Extra Virgin Olive Oil
Oil a baking tray with olive oil using a brush; Sprinkle the pumpkin slices with the farina to create a thin layer and place them densely one next to each other on the tray. Try to fully cover the surface of the tray; Sprinkle the olive oil over the pumpkin followed by the sugar, cinnamon and clove; Crush the walnuts coarsely using a mortar and pestle and sprinkle them above the pumpkin; Pour the dark rum and place in pre-heated oven at 160oC for 30 minutes until golden-brown.
Serve warm with a ball of vanilla ice cream as a dessert. You can also enjoy it as a healthy breakfast together with a spoon of strained Greek yoghurt or a light ricotta.
